Le Paillet de Chèvre – A dream for soft cheese lovers. The home of the Paillet de Chèvre is the Fumélois region in southwest France. The cheese dairy de la Lémance was founded in 1997 with the aim of promoting traditional cheeses. Production takes place in a skilful combination of traditional recipes and “savoir-faire”, the knowledge of cheese making. To tame its creamy texture, this soft cheese made from pasteurized goat’s milk was traditionally wrapped in straw – hence the name Paillet de Chèvre.
Like its relative, the Coeur de Paille, this organic cheese should not be served at room temperature, but rather cold because of its mild acidity.
