Tommette de Yenne

The Tommette de Yenne is an organic cheese specialty from the Haute Savoie region in France. It is made in the Coopérative Laitière de Yenne´. The strength of this dairy is the successful combination of the most modern technology with traditional recipes and masterful processing (affinage). This ancient knowledge and many years of experience result in cheese creations that pamper the palate and offer an extraordinary taste experience. During the 3-week ripening period, stored in damp natural stone cellars and rubbed with noble mushroom cultures, it gets its typical gray, blue and green bark. This delicious French cheese specialty has a full-bodied, nutty taste with fine nuances of nutmeg. It goes well with salads, hearty tapas, as a bread topping and as an aromatic cheese for the special French cheese platter. When gratinated, its rind becomes a culinary experience for cheese connoisseurs.
