URS, Sennerei Splügen

Urs is an organic mountain cheese that wakes up after 6 months of hibernation in the ripening cellar with a fine flavor and a creamy texture. The name Urs (from Ursus: the bear) is embossed on the side of the bear, alternating with a contour of a bear’s head. The Urs is made from silage-free Splügner organic milk, which is healthy and aromatic thanks to the location of the dairy and its farms in the high Alps thanks to a high proportion of herbs in the feed. During its ripening, the urs are refined with elderberry juice, which, together with the raw milk, makes a bear-like cheese.
